Extra fine cut steamed noodles are popular for Mongolian stir-fry restaurants. They do not need to be boiled. The noodle should be soaked in 140-150 degree water for about 10 minutes. Drain. Rinse in cold water for 1-2 minutes. Keep in cooler and stir fry as needed. After soaking, 1 pound of noodles yields about 1.5 pounds. |

This is our most popular noodle. It stands up well in a hot case, and can be used in Asian food dishes (stir-fry, chow mein and yakisoba) or as a cold Mediterranean dish. Steamed noodles should be soaked in 150-160 degree water for about 12-15 minutes. Drain. Rinse in cold water for 1-2 minutes. Keep in cooler and stir fry as needed. After soaking, 1 pound of noodle yields 1.5 pounds. This noodle is more cost effective than pre-cooked yakisoba and works well as a good replacement. |
